Tamales
Ingredients:
Dough:
- 65 g of butter
- 1/4 spoon of salt
- 1/4 spoon of sugar
- 4 eggs
- 65 g corn flour, sieved
- 65 g of fresh cheese
Filling:
- 1 cup of pork or chicken meat cut into square
- ½ cup of peanut sauce
- 2 hard eggs, chopped
- 1 tablespoon of raisins and green olives
- 2 chills cut in thin strings
- 1 green pepper cut in thin strings
- 20 “Archira” Leaf
Preparation:
Bate the butter, salt and sugar until a dreamy mix. Add the eggs, one at the time, mixing well after each one, add the corn flour and mix well. Last add the cheese.
In a separate bowl mix all the ingredients of the filling evenly.
Take one Archira leaf at a time and add a table spoon of the mixture and add small portions of the filling in the center. Fold all four edges inwards to avoid spilling. Put each one into the “tamaleta” (special saucepan to cook humitas a sort of “bain-marie pot) with the open part upwards. Vapor cook for 30 minutes.
