Spinach Soup

Ingredients

  • 50 g of butter
  • 1 pound of spinach, washed and chopped
  • ¾ pound of potatoes, peeled and sliced
  • ½ cup on white onions, skimmed and sliced (small)
  • 1 liter of chicken stock
  • 1 cup of milk
  • ¼ spoon of dry basil
  • Salt and pepper

Preparation

Melt the butter in a saucepan, add the onions, and allow them to fry at medium fire until cooked, approx 5 minutes gently stirring. Add the chicken stock and the spinach and bring to the boil, add salt and pepper and simmer for 25 minutes. Add the milk , let it simmer for 5 minutes. Before serving add dry basil and more salt and pepper to your taste.

Serve hot with traditional butter bread.
