Spring onions with garlic

Ingredients:

  • ½ pound of spring potatoes
  • 3 garlic cloves, finely chopped
  • 1 spoon of parsley, finely chopped
  • 2 table spoon of butter
  • salt and pepper

Preparation:

Boil the spring potatoes with salt until soft (all dente). Drain the water. In a frying pan melt the butter and add the garlic, fry at low temperature for 2 minutes; add the spring potatoes and the parsley and mix well; fry for 3 minutes. Serve hot.
