Locro
Ingredients
- 2 pounds of Potatoes pilled and squared
- 2 tablespoons of annatto “achiote” with vegetable oil
- 2 tablespoons of white onions
- 2 tablespoon of fresh cream
- 2 cups of whole milk
- 4 cups of boiling water
- 2 tablespoons of cheese
- ¼ tablespoon of cumin
- ½ tablespoon of oregano
- 1 tablespoon of salt or to your taste
Preparation
Heat the oil and fry the onions in a medium flameproof casserole, add the cumin and the oregano. Let it fry until light brown. Add milk, cream and potatoes and cook for 10 minutes. Add water and salt and bring to the boil, let it simmer at medium temp until thicken. Add cheese and serve hot.
