Empanada de Queso
Ingredients:
- 1 pound of flour
- 1 spoon of baking powder
- ½ pound of lard or butter
- ½ pound of cheese, chopped
- ½ cup of cold water
- ½ of vegetable or corn oil
Preparation:
In a bowl put the flower, baking powder and the butter or lard. Work everything well using your hands into an even mix. Add cold water to make smooth dough. Put the dough over a surface previously floured and briefly knead: if the mixture is to humid add some more flour. Cover with a napkin for 20 minutes.
Extern the dough very thin over a surface and cut into 15 cm circles. Using the finger tip wet the edge of the pastry circle. Add a table spoon of cheese and fold into half. Seal the edges with your fingers or pressing down with a fork.
Preheat the oil in a “Paila” or frying pan and fry the empanadas until brown. Serve hot prickling white sugar on top.
