Carrot Cake
Ingredients: 
- 1 cup of grated carrots, washed and peeled
- 2 cups of flour
- 2 cups of sugar
- ¾ cup of butter
- 4 eggs
- ½ cup cream
- ½ cup milk
- 1 spoon of vanilla essence
- ¼ spoon of salt
- 2 spoons of baking powder
Preparation:
In a bowl put the sugar and the butter and whisk, add the eggs, cream and milk. Sift the flour in to bowl, keep on whisking, add the baking powder, salt, vanilla and whisk away. Add the carrots and mix with a wooden spoon. Butter a baking mould, pour the mixture and bake for 35 to 45 minutes or until cook at a 180C oven. Best served hot with ice-cream.
